More Information About Us and Coffee

Our shop and roastery are located at Unit 13, 15/F, Delta House, 18 On Lai Street, Shek Mun, Sha Tin, Hong Kong. We currently operate on an appointment basis for pickups and also offer online ordering for delivery.

All our coffee beans are roasted in our own HK Roastery. We adhere strictly to Hong Kong's food production safety standards and follow a "roast-to-order" principle, ensuring your beans are freshly roasted after you place your order and shipped within 24 hours.

We offer a wide range of products, including:

    • Various specialty coffee beans (single origin, blends, and decaf)
    • Convenient drip bags and filter coffee
    • Professional brewing equipment like gooseneck kettles, 1Zpresso manual grinders, and Eureka electric grinders
    • Freshly roasted healthy nuts that pair perfectly with coffee

We actively practice sustainability by sourcing from green bean suppliers who engage in direct trade and build long-term relationships with farmers, ensuring they receive fair compensation. We also use environmentally friendly packaging materials to fulfill our corporate social responsibility.

Arabica: Features complex flavors with delicate aromas and acidity, typically grown at high altitudes. It is the mainstay of the specialty coffee market.

Robusta: Has higher caffeine content (about 1.5–2 times that of Arabica), a stronger, more bitter taste, and is often used for instant coffee or in espresso blends to enhance crema.

According to the Specialty Coffee Association (SCA) standards, only coffee that scores 80 points or higher in cupping and has a complete production history (traceable to the country, region, farm, and processing method) can be called "specialty coffee."

Single Origin: Refers to coffee beans from a single country, region, or estate, aiming to highlight the unique terroir and distinct flavors of that specific origin.

Blend: Created by roasters who mix beans from different origins in specific ratios to produce a more balanced, complex, or consistent flavor profile.

Flavor notes (like "berry, floral, nutty") are objective sensory evaluations of the coffee's aroma and taste made by cuppers based on the "Coffee Taster's Flavor Wheel." These descriptions help consumers anticipate the coffee's flavor profile—such as its acidity, sweetness, aroma type, and body—before purchasing.

Every bag of our coffee has a clear "Roasted On Date." We recommend letting the beans rest (degas) for 4–7 days after roasting before brewing, as the flavors will be more developed. The best consumption period is within one month of the roast date.

Light Roast: Best for showcasing the original floral and fruity notes and bright acidity of the beans, ideal for pour-over and other filter brewing methods.

Medium Roast: Balanced flavor with moderate sweetness and body, making it a versatile choice.

Dark Roast: Prominent caramel and chocolate flavors with heavier bitterness and low acidity, suitable for espresso or pairing with milk.

S.O.E. stands for Single Origin Espresso, which means using coffee beans from a single origin to make espresso. Compared to traditional blends, S.O.E. allows drinkers to experience the unique flavors of that specific origin more purely.

The grind size depends on your brewing device:

    • Coarse grind: French Press, Cold Brew
    • Medium grind: Pour-over drippers (V60, Kalita), Clever Dripper, Siphon
    • Fine grind: Moka Pot, AeroPress
    • Extra-fine grind: Espresso machine

If you're unsure, feel free to note your equipment in your order, and we'll be happy to grind it for you.

We generally recommend using water between 90°C – 96°C (194°F – 205°F). Higher temperatures can extract more flavor compounds, but if too high, may also bring out bitterness. You can adjust based on the roast level: use higher temperatures for light roasts and slightly lower temperatures for dark roasts.

We primarily use SF Express / JD Express for local delivery. Enjoy free shipping on orders over HK$250 (after discounts). A shipping fee of HK$25 applies to orders below this amount. You can also opt for self-pickup at our 24-hour pickup locker in Shek Mun. We also offer international shipping with varying fees depending on the country.

To deliver the freshest coffee to you, all our beans are roasted to order. Typically, your order will be roasted and shipped within 1-2 business days.

Caffeine is a central nervous system stimulant and can indeed affect sleep for some people. It's generally recommended to avoid caffeinated beverages 6 to 8 hours before bedtime if you are sensitive to caffeine. We also offer Swiss Water Process decaf beans, allowing you to enjoy coffee in the evening without worry.

Many studies indicate that moderate consumption of black coffee has several potential health benefits, such as boosting energy, promoting metabolism, and being rich in antioxidants. However, any diet should be balanced. We recommend viewing coffee as part of a healthy lifestyle.
