X5 Osmanthus Winey Blend brings together coffees from three origins: Ethiopia, Colombia and Yunnan. A pronounced osmanthus aroma leaps out of the cup, the palate opens with hawthorn-like red-fruit acidity, and the mid-palate brings the fermented sweetness of sweet fermented rice and wine. This isn't a play-it-safe coffee — it was blended to be remembered.

Why a Blend?
A single origin is "this is simply what this plot of land grows": once a lot sells out it's gone, and the next lot won't taste the same. A blend is different — it's built for a purpose: available all year round, tasting the same every time you order, and dependable with however you brew day to day.
Ethiopia handles the top-note aromatics; the osmanthus and floral notes come from it. Colombia adds red-fruit acidity and sweetness, giving the hawthorn and winey notes some backbone. Yunnan forms the base and fills out the body — without it, the aromas would float on the surface with nothing to hold them up. The two roast levels aren't just about offering one more option: a light roast preserves the osmanthus and winey aromas, but espresso extracts far more, so the same beans at a light roast would taste sharp. That's why the espresso version is a medium roast, trading a little floral aroma for balance.
About Yunnan
Yunnan coffee has improved fast in recent years, with its processing and grading catching up to international standards, yet it's still rarely seen in Hong Kong's specialty market. This blend uses it for structure rather than as the star — it doesn't steal the show, but without it the osmanthus and winey notes would fall apart.

Brewing
Filter version: start with 15 g of coffee to 240 g of water at 93°C, with a medium-fine grind.
Espresso version: start with an 18 g dose and a 36 g yield in 25 to 30 seconds, then fine-tune for your machine and taste.
