X5 Osmanthus Winey Blend brings together coffee from Ethiopia, Colombia and Yunnan. Osmanthus florals lead, followed by a hawthorn-like red fruit acidity and a fermented sweetness that reads as rice wine and grape. This is not a safe everyday cup — it was built to be remembered.

Why a blend
A single origin is whatever that piece of land produced. Once the lot is gone it is gone, and the next one will not taste the same. A blend is built for a purpose: available all year, consistent from order to order, and reliable in the way you actually brew.
Ethiopia carries the top notes — the osmanthus and the florals come from there. Colombia supplies the red fruit acidity and sweetness that give the hawthorn and wine character something to hang on. Yunnan sits underneath as the base, providing the body; without it the aromatics float with nothing to support them. The two roasts are not simply two products: a light roast holds the osmanthus and wine, but espresso extracts far harder, and the same light roast pulls sharp. The espresso version is roasted to medium, trading a little of the floral top for balance.
About the Yunnan
Yunnan coffee has improved quickly in recent years, with processing and grading now at international standards, yet it is still rare in the Hong Kong specialty market. Here it works as structure rather than as the lead — it does not compete for attention, but without it the osmanthus and wine notes would fall apart.

Brewing
Filter version Start from 15 g of coffee to 240 g of water at 93 degrees Celsius, medium-fine grind.
Espresso version Start from an 18 g dose pulling 36 g in 25 to 30 seconds, then adjust to your machine and taste.
