    Specialty Coffee 101
What's the difference between Arabica and Robusta beans?
Arabica: Known for its complex flavor profiles, aromatic qualities, and bright acidity. It typically grows at high altitudes and dominates the specialty coffee market.
Robusta: Has a much higher caffeine content (about 1.5–2x that of Arabica) and a stronger, more bitter taste. It's often used in instant coffee or espresso blends to add a thick crema.
    What is specialty coffee?
According to the Specialty Coffee Association (SCA), coffee that scores 80 points or higher on a 100-point scale during a cupping (tasting) is graded as "specialty." It must also have full traceability, from its origin country and farm down to the processing method.
What's the difference between single origin and blended coffee?
Single Origin: Coffee from a single known geographical origin (a farm, region, or country). It highlights the unique flavor characteristics of that specific terroir.
Blend: A mix of beans from different origins, expertly combined by a roaster to create a balanced, consistent, and often more complex flavor profile.
What do the flavor notes on the bag mean?
Tasting notes like "berry, floral, nutty" are part of a flavor profile determined by professional cuppers using the Coffee Taster's Flavor Wheel. These notes describe the coffee's aroma and taste, helping you anticipate its character—like its acidity, sweetness, and body—before you buy.
    About Our Products
How do you guarantee the freshness of your coffee beans?
Every bag is marked with a clear "Roasted On" date. We recommend letting the beans rest (degas) for 4–7 days after roasting for optimal flavor. The coffee will be at its best for about 4 weeks after the roast date.
How do I choose the right roast level?
Light Roast: Best for highlighting the bean's original floral and fruity notes with bright acidity. Ideal for pour-over and filter brewing methods.
Medium Roast: A balanced profile with moderate acidity and a fuller body. Very versatile.
Dark Roast: Features deep, caramel, and chocolatey flavors with low acidity and a heavy body. Great for espresso and coffee with milk.
What is SOE (Single Origin Espresso)?
S.O.E. stands for Single Origin Espresso. It means using beans from a single, specific origin for an espresso shot, rather than a traditional blend. This allows the unique and pure flavor profile of that origin to shine through.
    Brewing Guides
What grind size should I use?
The ideal grind size depends on your brewing method:
Coarse: For French Press, Cold Brew.
Medium: For Pour-Over (V60, Kalita), Drip Coffee Makers, Siphon.
    Fine: For Moka Pot, AeroPress.
    Extra Fine: For Espresso machines.
If you're unsure, just note your brewer in your order, and we'll gladly grind it for you.
What's the ideal water temperature for brewing?
We generally recommend a water temperature between 90°C – 96°C (195°F – 205°F). Hotter water extracts more flavor, but can lead to bitterness if too hot. As a rule of thumb, use hotter water for lighter roasts and slightly cooler water for darker roasts.
    Ordering & Shipping
What are your shipping methods and fees?
We use SF Express for local deliveries in Hong Kong. We offer free shipping on orders over HK$400 (after discounts). For orders below this amount, a shipping fee of HK$30 applies. You can also choose to pick up your order at our roastery in Shek Mun during business hours by appointment.
How long does it take to ship my order?
To ensure you receive the freshest coffee possible, all our beans are roasted to order. Typically, your order will be roasted and dispatched within 1-2 business days.

Do you have a loyalty program?
Yes, we do! Simply register as a member on our website to join our loyalty program. You'll earn reward points with every purchase, which can be redeemed for cash coupons and other exclusive gifts.

    Coffee & Health
Will drinking coffee affect my sleep?
Caffeine is a stimulant and can interfere with sleep for some people. If you are sensitive to caffeine, it's generally recommended to avoid it for 6 to 8 hours before bedtime. We also offer a delicious Swiss Water Process decaf coffee, so you can enjoy a cup anytime without the buzz.
What are the health benefits of coffee?
Numerous studies suggest that drinking black coffee in moderation has several potential health benefits, such as boosting energy levels, increasing metabolism, and providing a rich source of antioxidants. As with anything, it's best enjoyed as part of a balanced and healthy lifestyle.
